Catering and accommodation professionals in Kenya must master the preparation of specialty dishes, with seafood being a prominent category due to Kenya’s extensive coastline and rich aquatic resources. This chapter focuses on the preparation of seafood, emphasizing the unique qualities of ingredients used in international seafood dishes. Understanding these ingredients is crucial for chefs aiming to deliver authentic and high-quality dishes that meet diverse customer expectations in hotels, restaurants, and catering services across the country.
International dishes draw on a set of ingredients that recur across many world cuisines, each bringing its own structure, flavour or body to a dish. Recognising these ingredients and knowing how each behaves in cooking lets a chef prepare international dishes consistently and correctly.
Pasta is dried or fresh dough, usually made from wheat flour and water or egg, shaped into forms such as strands, ribbons or tubes, and cooked by boiling until tender but firm to the bite. It forms the base of many Italian-influenced international dishes and is cooked only until it reaches the right texture, since overcooking leaves it soft and sticky.
Caviar is salted fish roe, traditionally from sturgeon, served as a garnish or small course on its own, often with simple accompaniments such as toast or blinis that do not overpower its delicate, briny flavour. It is handled with a non-metallic spoon, since metal can react with it and taint its taste.
Wheat is a cereal grain milled into flour that is the base of bread, pasta and many sauces, where it provides structure through its gluten content or acts as a thickener. The amount and type of wheat flour used affects a dish's final texture, from the chewiness of a bread dough to the body of a sauce thickened with a flour-based roux.
Cheese is a dairy product made by coagulating milk and ageing or processing the resulting curd, giving a wide range of textures and flavours from soft and mild to hard and sharp. It is used both as an ingredient within a dish, such as melted into a sauce, and as a finished accompaniment, such as a cheese course, and different cheeses are chosen for their melting behaviour, flavour strength or ability to hold their shape.
Wine is used in international cooking both as a beverage pairing and as an ingredient in sauces, marinades and braises, where its acidity and flavour reduce and concentrate during cooking to add depth to a dish. A dry wine is generally chosen for savoury cooking, since its acidity balances rich or fatty ingredients, and it is added early enough in cooking for its raw alcohol taste to cook off.
Vinegar is a sour liquid made by fermenting alcohol into acetic acid, used to add acidity to dressings, marinades, sauces and pickles. Its acidity brightens a dish's flavour, helps tenderise proteins in a marinade and acts as a preservative in pickling.
Soy sauce is a salty, fermented liquid condiment made from soybeans, used widely in East Asian influenced dishes to add savoury depth and colour. It is added carefully, since its strong saltiness can easily overpower a dish if used in excess, and it also browns food during cooking due to its sugar content.
Chives are a slender, mild-flavoured herb from the onion family, used fresh and finely chopped as a garnish or a light seasoning in sauces, soups and egg dishes. Their delicate flavour is best preserved by adding them at the end of cooking or just before serving, since prolonged heat destroys their aroma.
