Compiled by: Grace Muriuki

The preparation of breakfast items is a fundamental skill across numerous professional fields, from hospitality and healthcare to education and business. Breakfast, often described as the most important meal of the day, sets the tone for energy levels, productivity, and overall well-being. In Kenya, diverse cultural practices and nutritional needs influence breakfast choices, making it essential for professionals in food production to understand various types of breakfast and maintain strict quality control to ensure safety and freshness. This chapter explores the types of breakfast and the critical role of freshness and quality control guided by HACCP principles.

4.1 Types of breakfast

A breakfast menu in a hotel or restaurant may follow several different styles, and a chef needs to recognise each one to prepare and plan it correctly.

American

An American breakfast is a substantial, cooked meal, typically combining eggs, a meat such as bacon or sausage, toast or pancakes, and a hot drink such as coffee.

English

An English breakfast is a full, hot plated meal built around eggs, bacon or sausage, grilled tomato, baked beans and toast, designed to be filling and energy giving.

Continental

A continental breakfast is a light, mostly cold meal of bread, pastries, butter, jam, fruit and a hot drink, needing little cooking and suited to quick service.

Vegan

A vegan breakfast uses no animal products at all, relying on items such as fruit, cereals, plant based milk and plant based protein to give a balanced start to the day.

Asian

An Asian breakfast varies by region but often includes rice, noodles or congee, alongside pickled or lightly cooked vegetables and a protein such as egg, served savoury rather than sweet.

Brunch

Brunch is a late morning meal that combines breakfast and lunch items, such as eggs served alongside a salad or a light main course, suited to a more relaxed, later service time.

  1. Explain the characteristics of traditional breakfast and its relevance in Kenyan institutions. (10 marks)
  2. Describe how continental breakfast differs from a full English breakfast in terms of preparation and nutritional content. (10 marks)
