Packaging decorated cakes is an essential aspect of cake decoration that ensures the product reaches customers in optimal condition while enhancing its visual appeal. In Kenya’s diverse commercial settings, from county referral hospitals providing catering services to retail bakeries in Nairobi’s central business district, proper packaging safeguards the cake’s freshness, protects its intricate designs, and facilitates transportation. This chapter explores the materials used specifically for iced and decorated cakes, emphasizing their suitability for various cake types and professional contexts.

4.1 Packaging Materials for Iced and Decorated Cakes

Packaging materials for iced and decorated cakes protect the cake from damage and contamination in transit while presenting the decoration attractively, so the right choice depends on the cake's size, its decoration and how far it must travel.

Cake boxes

Cake boxes, usually made of corrugated cardboard, give a cake a rigid, enclosed outer shell that protects it from knocks, dust and light during handling and transport. A box cut to match the cake's size, with enough height to clear any piped or sculpted decoration, prevents the lid from pressing down on the icing. Example: a baker chooses a tall box for a cake finished with piped rosettes, leaving clear headroom above the highest point of decoration.

Plastic containers

Clear plastic containers, including hinged clamshell boxes, let a customer see the decoration without opening the package while still sealing out moisture and dust. They suit smaller items such as individual decorated cupcakes or cake slices more than large whole cakes, which need the rigid support of a box. Example: a baker packs a tray of decorated cupcakes into a clamshell container so each one stays visible and undisturbed until it is opened.

Wrapping materials

Wrapping materials such as food-grade plastic film or greaseproof paper are used inside a box or container to line it, cushion the cake or wrap a portion that does not need a full box. Cling film pressed gently against a cut surface keeps a sliced cake from drying out, while a sheet of greaseproof paper lining a box base stops the cake sticking to the cardboard. Example: a baker lines the base of a cake box with greaseproof paper before placing a finished gateau inside, so it lifts out cleanly later.

Decorative (ribbons, labels)

A ribbon tied around a cake box and a label stating the cake's name finish the package neatly and make it look ready for sale or for a special occasion. Example: a baker finishes a boxed celebration cake with a single ribbon tied in a simple bow and a label naming the flavour inside.

Edible paper, wafer paper

Edible paper and wafer paper are thin, food-safe sheets that can be printed or shaped and placed directly onto a cake's surface as part of its decoration, rather than as an outer packaging layer. Example: a baker applies a printed wafer paper design to the top of an iced cake before it is boxed, adding a decorative image that can be eaten along with the cake.

Cake boxes

Beyond their size and height, cake boxes with a sturdy base and well-fitting lid keep a decorated cake stable and prevent it sliding during transport, especially over an uneven surface. Example: a baker places a cake on a board sized to the box's base before closing the lid, so the cake cannot shift inside the box.

Plastic containers

Where a plastic container is used instead of a box, a flat, stable base and a lid that clips firmly in place, without pressing directly onto the decoration, keep the cake secure in the same way a box does. Example: a baker checks that a clamshell lid closes with a small gap above a piped border, rather than flattening it.

Wrapping materials

Wrapping materials are also chosen for how well they control moisture: a material that is too airtight against a freshly iced cake can trap condensation on the icing, while one that is too porous lets the cake dry out, so the wrap is matched to the cake's finish. Example: a baker leaves a small vent gap when wrapping a freshly iced cake in film, allowing a little air exchange until the icing has fully set.

Decorative add Ons (ribbons, stickers and labels)

Beyond a plain ribbon and label, small stickers carrying a flavour name, allergen note or a simple design give extra finishing detail to a packaged cake without adding bulk. Example: a baker adds a small sticker noting the cake contains nuts, alongside the usual ribbon and name label.

Edible packaging (rice paper, wafer paper

Rice paper, alongside wafer paper, is another thin, edible sheet used directly on the cake's surface for printed designs or delicate decorative shapes, chosen over wafer paper when a slightly different texture or thinner finish is wanted. Example: a baker uses rice paper for a delicate floral cut-out decoration where wafer paper would be too stiff to shape as finely.
